Pan fry plantains

Gently toss plantain slices with brown sugar, then place into hot oil. Fry until the plantains begin to turn golden brown, then turn over, and continue frying until they have caramelized, about 2 minutes per side. Drain plantains on a paper towel-lined plate and sprinkle with salt before serving. Peel and slice plantains, and sprinkle some salt on both sides. Preheat oil in a frying pan or skillet. Add plantain and fry one side of the plantains till golden brown, then turn over using a slotted spoon or turner and fry on the other side. (The second side will cook much quicker, so keep an eye on your plantains.
Working with one piece at a time, use a tostonera or large flat-bottomed cup to gently press each plantain to about 1/2-inch thick. (If using a cup, keep it as centered as possible to flatten the plantains evenly.)
